Diner-Style Buttermilk Pancakes

View recipe →This has been the only pie on our dessert case since the day we opened. Mixing two apple varieties keeps the texture interesting: one that holds its shape, and one that breaks down into a soft, saucy filling.
Toss the sliced apples with both sugars, flour, cinnamon, nutmeg, and lemon juice in a large bowl.
Line a 9-inch pie dish with one crust and mound in the apple filling. Dot with the butter pieces.
Cut the second crust into strips and weave into a lattice over the filling, or lay it whole with a few vents cut in.
Brush the crust with the beaten egg and sprinkle with coarse sugar.
Bake at 400°F for 20 minutes, then reduce to 350°F and bake 35 to 40 minutes more, until the crust is deep golden and the filling bubbles.
Cool at least 2 hours before slicing, so the filling has time to set.
Slicing into a warm pie looks tempting but almost always ends in a runny mess. The filling needs the full cooling time to hold together.
