Stovetop Mac and Cheese
Elbow macaroni in a sharp cheddar sauce, made entirely on the stovetop with no baking required.
View recipe →This is the soup half our dining room orders alongside a grilled cheese sandwich, no matter the season. Simmering the tomatoes with a little sugar rounds out their acidity without making the soup taste sweet.
Melt the butter in a pot over medium heat and cook the onion for 6 minutes until soft. Add the garlic and cook 1 minute.
Add the crushed tomatoes, stock, and sugar. Bring to a simmer and cook 20 minutes, stirring occasionally.
Purée the soup until smooth with an immersion blender, or in batches in a stand blender.
Stir in the cream and basil, then season with salt and pepper. Warm through without boiling.
Ladle into bowls and top with extra basil.
Skip the sugar if your tomatoes are already sweet. Taste the soup before adding it, since canned tomatoes vary quite a bit brand to brand.
